What the chief steward job in Dibba Al Bayah involves
The post leads the Stewarding Department at Six Senses Zighy Bay (P.O. Box 212, Dibba-Musandam), with the aim of delivering product and service at brand operating standards. The ad also expects the Chief Steward to safeguard the brand’s sustainability, wellness and Out of the Ordinary pillars and to see that directives and initiatives are carried out across the resort.
Responsibilities
- Manages stewarding across every kitchen area, keeping it clean and sanitary and in line with state and local health rules
- Sets minimum and maximum stock levels and controls par stocks of materials and equipment
- Liaises with the Purchasing Department and suppliers on what the stewarding operation needs to buy
- Oversees work-station setup, dish storage and cleanliness, dish machine loading, chemical levels and kitchen traffic flow
- Controls storeroom orders, issues china, silver and glass, and checks that every food and beverage outlet has enough equipment
- Supervises the day-to-day work of the stewarding staff, communicates objectives and expectations, schedules assignments and enforces policies and procedures
- Monitors cost, breakage and the quality of support given to outlets, banquets and other areas, keeps spending within the set budget and maintains procedures for securing inventory
- Operates the department in line with all legal, statutory, financial, contractual, security and safety requirements
Requirements
- Experience in a similar role at luxury hotels, with proven results
- Strong leadership skills and the ability to work well in multicultural teams
- Alcohol awareness certification and/or a food service permit or valid health or food handler card, as required by the local or state government agency
- Excellent command of written and spoken English
- Ability to live in a remote location for extended periods and to travel on single status
Preferred qualifications
- Knowledge of food and beverage service operations
